Dirty Rice

  • 2 tbsp olive oil
  • 1 onion (chopped)
  • 2 pieces of garlic (pressed)
  • 0.5 tbsp paprika powder

  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 0.5 fresh red chili pepper (chopped)
  • 1 green paprika (chopped)
  • 3 celery stalks (chopped)
  • 3 tomatoes (chopped)
  • 2 dl (7 fl oz) corn
  • 3 dl (10 fl oz) rice
  • 5.5 dl (18 fl oz) chicken broth
  • 1.5 tbsp lime juice
  • Salt and pepper
  • Tabasco
  • 1 bunch of coriander (or parsley)

Prepare:

  1. Heat the olive oil in a frying pan, add garlic and onion and stir fry for a minute. Add paprika powder, chili powder and cumin and continue frying for another minute.
  2. Add fresh chili, paprika and celery and continue frying for a couple of minutes.
  3. Add rice, broth, salt and pepper, cover it and let simmer for 15 minutes.
  4. When the rice is ready, add tomatoes, corn and lime juice.
  5. Put coriander/parsley on the top.
