- 2 tbsp olive oil
- 1 onion (chopped)
- 2 pieces of garlic (pressed)
- 0.5 tbsp paprika powder
- 1 tsp chili powder
- 1 tsp cumin powder
- 0.5 fresh red chili pepper (chopped)
- 1 green paprika (chopped)
- 3 celery stalks (chopped)
- 3 tomatoes (chopped)
- 2 dl (7 fl oz) corn
- 3 dl (10 fl oz) rice
- 5.5 dl (18 fl oz) chicken broth
- 1.5 tbsp lime juice
- Salt and pepper
- Tabasco
- 1 bunch of coriander (or parsley)
Prepare:
- Heat the olive oil in a frying pan, add garlic and onion and stir fry for a minute. Add paprika powder, chili powder and cumin and continue frying for another minute.
- Add fresh chili, paprika and celery and continue frying for a couple of minutes.
- Add rice, broth, salt and pepper, cover it and let simmer for 15 minutes.
- When the rice is ready, add tomatoes, corn and lime juice.
- Put coriander/parsley on the top.
