Tori no Karaage (Japanese Fried Chicken)

  • 700 g (1.7 lb) chicken thigh or fillet (cut in piece)
  • 1 tbsp Sake or white wine
  • 1/2 tsp brown sugar or honey
  • 1 tbsp sake or white wine

  • 2 cloves garlic (shred)
  • 1 tbsp ginger (shred)
  • 1 egg
  • Black pepper
  • 1 tbsp soy sauce
  • 100 ml (3 fl oz) flour
  • 100 ml (3 fl oz) potato starch
  • 500 ml (17 fl oz) frying oil
  • Lemon wedges ofr garnish
  • Dip sauce (optional) : 100 ml (3 fl oz) soy sauce, 100 ml (3 fl oz) vinegar, 2 tbsp chopped leek, 1 tbsp sesame seeds, 1 tsp sesame oil
