- 2 cups Japanese rice or round rice
- 2 cups of water to soak
- 1/4 cup rice vinegar
- 2 tbsp sugar
- 1/2 tsp salt
- Wasabi and Gari (pickled ginger)
- Nori (roasted seaweed)
- Toppings (salmon, tuna, roe, avocado, Tamago-yaki (Japanese omelet), cucumber, paprika, Philadelphia cheese , crab sticks etc
- Wash the rice in cold water, change to fresh water a couple of times and soak it for at least 30 minutes.
- Always keep the rice covered! Bring the rice to a boil. Once it starts boiling, keep boiling for 10 minutes. Remove from heat and and leave it for 10-15 minutes.
- Mix sugar, vinegar & salt and add to the rice. It’s important to quickly cool the rice and remove moisture. Use a fan if available!
- Cucumber for sushi roll. Cut cucumber in 4 horizontal pieces and remove the seed part (fillet). Cut each piece in 2-3 in horizontal pieces.
- Slice fillet of fish thinly, about 3 mm.
- Cut/slice toppings for Sushi.
- Put Nori on Sushi mat and put a thin layer of rice on the rough side of the Nori…
- Put toppings on the end closest to you.
- Traditional Norimaki roll3
- Form well. Nori will be on the outside.
- Thin Norimaki calls Hosomaki. Cucumber roll calls Kappamaki. Use half size of Nori.
- To make inside out Norimaki roll you have to wrap the mat with plastic foile.
- Put rice on Nori. Make a small mountain at your side.
- Turn around the Nori and rice. The mountain part will be away from you.
- Roll it.
- Put topping. Sesam, Furikake (rice seasoning), rom… Caliphornia roll is with cucumber, avocado, omlet and crab stick inside, topped woth sesame or tobikko (fly fish roe)
- Dompuk’s faborite. Omlet, cucumber and Philadelphia cheese inside, salmon as skin.
- Put a thin lager of salmon on the roll.
- If you have a torch, you can flambe the surface of salmon.
- Dompuk Special Roll is done! If you use smoked salmon, it will be Philadelphia roll.
- If you put thinly sliced avocado, it will be Caterpillar Roll
- Nigiri – hand formed Sushi. Make a small ball with only one hand.
- Pick up a fish fillet with another hand. If you want, you can put some Wasabi.
- Nigiri is done! You can put roe on the top.
- Salmon Nigiri is nice to flambe.
- This is Dompuk Salmon Nigiri Special. Philadelphia cheese on the top. Cayenne sauce, Shichimi (Japanse chili-based spice mix), majonese and tabasco is also nice.
- Toppings which is difficult to be together with rice ball (avocado, eel, mussel), you can use Nori as belt.
- Sushi Moriawase (assorted sushi)!
