Hovmästarsås (Swedish Mustard Sauce)

  • 1 egg yolk
  • 1.5 tbsp non-sweet mustard
  • 1 tsp sugar
  • 1 pinch smoked salt
  • 1 pinch freshly ground white pepper
  • 1 tsp white vinegar

  • 0.5 dl (1.6 fl oz) oil (4/5 rape oil + 1/5 olive oil)
  • Dill (chopped fresh or frozen)
  • 0.5 dl (1.6 fl oz) Crème fraîche (soured cream)
  1. Mix mustard, egg yolk, sugar, salt, white pepper and vinegar.
  2. Add oil slowly using electrical mixer to whip. Be careful, or the mixture won’t blend
  3. Add chopped dill and Crème fraîche
  4. Put it to refridge at least for one hour
