Hovmästarsås (Swedish Mustard Sauce)
- 1 egg yolk
- 1.5 tbsp non-sweet mustard
- 1 tsp sugar
- 1 pinch smoked salt
- 1 pinch freshly ground white pepper
- 1 tsp white vinegar
- 0.5 dl (1.6 fl oz) oil (4/5 rape oil + 1/5 olive oil)
- Dill (chopped fresh or frozen)
- 0.5 dl (1.6 fl oz) Crème fraîche (soured cream)
- Mix mustard, egg yolk, sugar, salt, white pepper and vinegar.
- Add oil slowly using electrical mixer to whip. Be careful, or the mixture won’t blend
- Add chopped dill and Crème fraîche
- Put it to refridge at least for one hour
