Avocado Vinaigrette

  • 2 avocados
  • 1/2 red onion (chopped)
  • *** 2 tbsp olive oil
  • *** 1 tbsp red balsamic vinegar
  • *** 1/2 tbsp lemon juice
  • *** Freshly ground pepper and salt
  • (Optional toppings) Chopped chili, parsley, coriander

Blend *** with mixer, pour the liquid over chopped onion and mix with a spoon. Divide the avocado in 2 halves, remove seed. Portion out the vinegrette into the avocado halves. Pour desired topping over the avocado.
