- 4 beets
- 1 small onion (chopped)
- 2 tbsp vinegar
- 1 tbsp oil
- Salt and pepper
- 3 tbsp mayonnaise (optional)
- 1. Boil beets for 1 hour until soft.
- 2. Let them cool in cold water and peel out the skin.
- 3. Grate or cut the beets.
- 4. Add onion, salt, pepper and vinegar and mix. Add oil (and mayonnaise).
- 5. Done. Nice with goat cheese.
