Shake no Miso-zuke Yaki (鮭の味噌漬け焼き Grilled Miso-marinated Salmon)

  • 500 g (1 lb) Salmon (sliced in 3 cm / 1 in)
  • 25 g (0.8 oz) salt
  • 2-3 tbs Miso
  • 2-3 tbs Sake
  • (1 tbsp honey or sugar, 1 tbsp grated ginger if you want)

  1. Marinate the salmon with salt for 15-30 minutes.
  2. Rince the salt out by fresh water and wipe the fish carefully.
  3. Mix the Miso and Sake. You can add honey and/or ginger if you want.
  4. Marinate the salmon with Miso over night.
  5. Remove Miso.
  6. Put it in oven in 250 °C (482 °F) for 15-20 minutes.

If you vacuum cover while marinating, you can keep it longer. You can use soy sauce in stead of Miso, it will be Shoyu-Zuke. If you use 1/2 tsp salt instead of Miso, it will be Shio-jake.
