- 700 g (1.7 lb) chicken thigh or fillet (cut in piece)
- 1 tbsp Sake or white wine
- 1/2 tsp brown sugar or honey
- 1 tbsp sake or white wine
- 2 cloves garlic (shred)
- 1 tbsp ginger (shred)
- 1 egg
- Black pepper
- 1 tbsp soy sauce
- 100 ml (3 fl oz) flour
- 100 ml (3 fl oz) potato starch
- 500 ml (17 fl oz) frying oil
- Lemon wedges ofr garnish
- Dip sauce (optional) : 100 ml (3 fl oz) soy sauce, 100 ml (3 fl oz) vinegar, 2 tbsp chopped leek, 1 tbsp sesame seeds, 1 tsp sesame oil
- 1. Mix chicken, sugar and sake and leave for 10 minutes. Add black pepper, garlic, ginager and mix. Then add saoy sauce (and egg) and mix and leave for 15 minutes.
- 2. Preheat frying oil. In the meanwhile drain chicken. Mix flour and potato starch in a plastic bag and add chicken. Shake it well.
- 3. Deep fry chicken. If you wan to make it juicy and crunchy, fry 2 times.
- 4. Done!
