- 24 large mussels (cleaned)
- 1/2 cup rice
- 2 cups water
- 1/2 tsp salt
- 1 tbsp olive oil
- 1 onion (chopped)
- 1 clove garlic (minced)
- 1 tbsp pine nuts (optional)
- 1 tbsp raisin (optional)
- Dried mint
- Black pepper
- Lemon wedges for garnish
- 1. Boil mussels with salt water until the mussels open.
- 2. Strain the boiling water like coffee.
- 3. Fry onion and garlic with olive oil.
- 4. Add rice and fry until transparent.
- 5. Add 1 cup of the boiling water and boil for 10 minutes. Add the boiling water if the water gone.
- 6. It’s ready when the rice is “al dente”. Add pine nuts, mint, black pepper, raisin.
- 7. Open the mussels and stuff rice and cover.
- 8. Steam boil the mussels for 10 minutes.
