Papa a la Huancaina (Peruvian potatoes with spicy cheese sauce)

  • 4 potatoes (boiled)
  • 200 g (7 oz) queso fresco (fresh white cheese) or another cheese (feta or/and cottage)
  • 1/2 cup milk

  • 1 tbsp Aji­ amarillo paste or 1/4-1/2 Habanero
  • 1 clove garlic
  • 2 tbsp oil
  • 4 crackers
  • 2 boiled eggs (without shell, sliced)
  • Black olives
  1. Mix all ingredients expect for potatoes, eggs and olives.
  2. Peel out skin of the potatoes and slice.
  3. Put the potatoes on the plate.
  4. Pour the cheese sauce.
  5. Garnish with olives and eggs
