Pickled Herring Ceviche Style
- 5-6 herring fillets
- 1.5 red onions (sliced)
- 1 clove garlic (finely chopped)
- 3 limes (1 sliced, 2 juice)
Yuzu Kosho (Japanese Citrus Fruit Pepper Seasoning)
Yuzu Kosho is Japanese seasoning paste with citron and fresh chili pepper and very nice with chicken and Udon-noodle.
- 3 Yuzu (Japanese citrus fruit) or lime or/and lemon
- 1 tsp sea salt
- 5 fresh green or red chili pepper (finely chopped without seeds)
Chili Poppers with Panko
- 10-15 fresh chili pepper (cut in 2 pieces)
- 100 g (3.5 oz) cheddar cheese (shred)
- 100 g (3.5 oz) cream cheese (in room temperature)
- 1 pinch garlic powder (optional)

Jolokia Sauce
- 1 tbsp olive oil
- 1 dl (3.3 oz) chopped onion
- 6 cloves of garlic
- 1 Bhut Jolokia
- 4-5 red spanish peppers or other varieties of chilies
- 1 large red paprika
